Brocolli and

1½ c cooked rice -
white or wild rice
1 T unsalted butter
1 head of broccoli, chopped
½ c chopped celery
½ c chopped white onion
1 can of cream of mushroom soup
1 can of fried onions
Shredded cheddar cheese
Sautee the onions and celery in butter until soft. Stir in the chopped
broccoli. Add the cream of mushroom soup and stir to blend well. Cook
over medium heat, adding small amounts of water as needed, until
the mixture is smooth. Add the cooked rice and blend well. Pour the
mixture into a casserole dish. Top with shredded cheddar cheese and fried onions. Cover and bake at 350 for 30 minutes.
